The Oats, Grapefruit and Lemon-Mint Parfait is a healthy breakfast dish that makes the best use of fruits.
Many of us find consuming oats boring, but when you make oats into a Parfait and mix it with fruits; you will see a different light to oats. Most people would prefer cooking the oats first. Well…I like mine raw and crunchy :).
- 5 tbsp plain oats
- 1 cup plain yogurt
- 3 slices of grapefruit, peeled
- 5 mint leaves, finely chopped
- 1 slice of lemon
Spoon the oats into a glass or bowl. On the side, mix chopped mint leaves, grapefruit and lemon juice (squeezed from the lemon slice) with plain yogurt and pour this mixture over the oats.
Serve Oats, Grapefruit and Lemon-Mint Parfait immediately for a quick and healthy breakfast.
