If you’re a pasta lover like me; I promise that you will be smitten over this salad. Easy to make and doesn’t take long to prepare too.
- 250g macaroni
- 2 tbsp olive oil
- 200g mushrooms
- 1 green & 1/4 red pepper (sliced into strips)
- 1 packet black olives
- 500g country mixed vegetables
- 1 tsp minced garlic
- 2 tsp lemon & herb spice
- black pepper
- water (for boiling macaroni)
- A drizzle of balsamic vinegar
Boil macaroni on medium heat for 15mins or until ready.
Drain water and set aside.
I started with boiling macaroni because this is a cold salad.
When done with macaroni, heat oil a bit. Please note that Olive oil mustn’t be too hot or it will lose it’s nutrients. Now fry mushrooms, peppers, mixed vegetables and add minced garlic and cook for 8-10 mins.
As we all know, veggies musn’t be overcooked otherwise they will lose their juicyness and crunchiness :). Stir and set aside to cool.
Now add macaroni to your veggie mixture, season with lemon & herb spice and black pepper and stir.
When it’s cool enough, add black olives, drizzle balsamic vinegar and serve.
You can also have it with relish if you want.
